CUT EGGPLANT INTO 8 SLICES. MIX PANKO & PARMESAN. DREDGE EGGPLANT IN EGG, THEN PANKO MIXTURE. SPRAY PAN WITH OLIVE OIL AND COOK EGGPLANT ON BOTH SIDES. PLACE 4 SLICES DOWN, ADD A SLICE OF GOAT CHEESE AND COVER WITH 1/2 MARINARA SAUCE. PLACE ANOTHER LAYER OF EGGPLANT, CHESE AND MARINARA. CAN ADD PARMESAN TO TOP. BAKE FOR 15 MINUTES IN 400 DEGREE OVEN.
