8 oz Shrimp, cooked Tilapia filets (3 small or 2 large)1 cup kernels Yellow Sweet Corn, Frozen 1 small Onions, raw 1 large russet Potato, with skin 1 can diced new potatoes1 carton Chicken Broth, low sodium12 fl oz Milk, canned, evaporated 4 oz Mozzarella Cheese, shredded4 oz Imitation Alaskan King Crab Salt, pepper, bay leaf, cayenne, paprika, and parsley to taste
Chop and brown onion
Season and sear fish and shrimp until just done. Set aside
Add broth, seasonings and potatoes to pot and bring to boil boil for 5-7 min.
Add evaporated milk, mozzarella, corn and shredded imitation crab and reduce to simmer.
Add fish, shrimp, onion and stir in gently.
Add mozzarella
Simmer for 20-30 min to incorporate all the flavors, reduce, and thicken the broth.
Serve with crackers, french bread, or cornbread
