Fall Quinoa with Apples, Walnuts, and Crandberries

1 tsp Cinnamon, ground 2 oz Walnuts 2 tbsp Maple Syrup 0.13 cup Cranberries, dried, sweetened (craisins) 3 tsp Grey Poupon Dijon Mustard 2 tbsp Extra Virgin Olive Oil 1 serving Granny smith apple - 1 med. apple 0.50 cup Ancient Harvest Quinoa
Bring water to a boil in a saucepan. Once boiling, reduce to a simmer, add quinoa. Cover and simmer about 10 minutes. Remove from heat and fluff the quinoa with a fork. Whisk together the dressing ingredients in a bowl and add to cooled quinoa. Mix in the apple, walnuts, and cranberries. Serve warm or chill in the fridge until ready to serve.
