3 Boneless Skinless Chicken Breasts1 can (14.5 oz) Del Monte Petite Cut Diced Tomatoes1 tsp Garlic, minced1 medium Scallion, diced4 oz Baby Portabella Mushrooms, slicedSaltPepperOlive Oil Cooking Spray
Spray a skillet with cooking spray and heat over medium heat. Add garlic and scallions and saute. Pierce chicken with a fork several times, place in skillet, sprinkle with a dash of salt and pepper, and brown on one side.

Flip the chicken and pour entire can of diced tomatoes on top. Add mushrooms and simmer over medium heat for about 15 minutes.

Reduce heat and continue to simmer for another 20-30 minutes or until chicken is cooked through. (The longer it simmers, the more flavor will be absorbed into the chicken.)

Additional meal ideas: Serve over brown rice or whole wheat pasta. Or, add different types of vegetables, like broccoli, zuchinni, squash, etc.
