1.125 cup Bob's Red Mill Almond Meal/Flour (1/4 cup is 28g) 12 tbsp Coconut Secret Raw Coconut Flour (by NOBULL56) .66 tbsp Molasses, blackstrap 2 serving 1 large egg (per the egg board) 50g 1 tsp Vanilla extract, imitation, alcohol 1 tbsp Apple Cider Vinegar, Bragg's Organic .5 cup Butter, salted 24 tsp Swerve Granulated (1 tsp) net carb (by IMENONELSE) .5 tsp Baking Soda .25 tsp Baking Powder 1 tbsp Ginger, ground 1 tbsp Cinnamon, ground .5 tsp Allspice .5 tsp Cloves, ground .5 tsp Salt 2 tbsp Now Psyllium Husk Powder
Mix together flours, baking soda, powder and psyllium husk (make sure it is very fine ground) with spices - set aside.
Cream butter and Swerve well, add molasses, vinegar and eggs.
Slowly add sifted dry ingredients until well combined, refridgerate dough at least 3 hrs.
Cut into shapes, bake at 350 degrees for 8-10 minutes, or until edges are golden.
Serving Size: makes 24-30 3-4" gingerbread men
