Chicken Capri (SB Phase 1)

Ingredients
- 1 Cup Reduced-Fat Ricotta Cheese- 1/2 tsp. Dried Oregano- 1/4 tsp. Salt- 1/4 tsp. Ground Black Pepper- 4 Boneless, Skinless Chicken Breast Halves- 1/2 tsp. Garlic Powder- 2 Tbsp. Extra-Virgin Olive Oil- 1 Cup Crushed Tomaotes- 4 slices Reduced-Fat Mozzarella Cheese (or Provolone)
Directions
Makes 4 servings. Can be served with a crisp salad.

1) Blend ricotta, oregano, salt, and pepper in processor or belnder.
2) Rub chicken with garlic powder.
3) Heat 2 T (all) extra virgin olive oil in large skillet over medium heat.
4) Add chicken and cook for about 12 minutes per side.
5) Remove from skillet and allow to cook in a large baking dish.

6) Pre-heat oven to 350 degrees.

7) When chicken has cooled, spoon 1/4 cup of chese mixture and 1/4 cup of crushed tomatoes on each breast half.
8) Top each with slice of the reduced fat mozzarella
9) Bake in oven for about 20 minutes or until chicken is done (about 170 degress internally) and juices run clear

    This was pretty good and easy to make. I added artichokes and black olives, since my family enjoys those. I did use fat free provolone, but think I would prefer mozzerella. - 5/25/09

    I've made quite a few of the SB recipes, and, like the others, this IS a keeper! YUMMY! I made extra of the ricotta topping and added some of the crushed tomatoes to it, along with some red pepper flakes, and mixed it with some WW Penne. I also baked some zucchini. Great meal! - 5/26/09

    This recipes came out awesome. My fiance and father-in-law loved it.

    I did slightly alter it, though. It says to cook the chicken for 12 minutes per side. I didn't want to burn it, so I went with much less time on cooking the chicken in the skillet. - 7/18/08

    This was excellent!! Not everyone in our house is living the SB life, but even they loved it! Kind of a mock chicken parmesan without all the fattening cheese used. Truly couldn't tell that fat-free and lowfat cheese was used. Used a can of Hunts diced tomatoes, w/basil, oregano and garlic. Delish! - 6/11/12
