Zippy Apricot Rosemary Chicken

4 - 4oz chicken breasts8T Sugar Free Apricot Preserves1T Prepared Horseradish1T fresh rosemary1tsp salt1tsp pepper
Preheat oven to 375. Spray a baking dish with cooking spray. Using a meat mallet pound the chicken breasts out to even thickness. Then season the chicken breasts with salt and pepper and place in the baking dish. Bake for approx 10-15 minutes. In a small bowl combine apricot preserves, horseradish and rosemary. Pour over the chicken breasts and bake for an additional 15 - 20 minutes or until the chicken is cooked through.
If you wish make a little extra sauce for dipping. Change the amount of horseradish for desired heat level. Also, substitute pork tenderloin for the chicken or orange marmalade for the apricot.
