Homemade Rhubarb Pie

crust:1/2 c Country Crock Light Spread1/4 cup skim milk1 cup whole wheat flour (+ or - 1/2 cup)Filling:3 cups chopped rhubarb1 cup granulated sugar1/4 cup cornstarch1/4 cup water
To make crust, knead together margarine, milk and flour in a bowl. Turn out onto floured surface and roll out thin and flat. Drape 1/2 dough in pie pan and use fingers to press into pan. roll out other 1/2 of dough to form top crust.
to make filling, mix all 4 ingredients in a medium saucepan, and heat until boiling, or thickened. Remove from heat and pour into pie shell. gently place top crust on top of filling and seal edges.
Bake at 375 for 45 minutes or until crust is golden brown.
I cut this pie into 16 small slices and top with Cool Whip Free! mmmm yum
