4.0 large Scrambled Egg3.0 medium Carrots, raw4.0 clove Garlic4.0 cup, pieces or slices Mushrooms, fresh16.0 oz Shrimp, raw0.25 cup Peanuts, dry-roasted3.0 tbsp Extra Virgin Olive Oil28.0 oz miracle noodle angle hair6.0 tsp Truvia Baking Blend Natural Sweetener with Sugar - serving size 1/2 tsp (2g)8.0 tbsp Lime Juice, juice of 1 lime2.0 serving Green Onion (fresh-1 stalk)40.0 grams Cilantro, raw4.0 cup bean sprouts6.0 tbsp Red boat fish sauce
For sauce: combine lime juice, fish sauce and Truvia and stir to combine set aside.
Rinse and drain pasta as directed on package pat dry with paper towels as much as possible.
Sautee mushrooms and carrots and one tablespoon of olive oil. Add garlic and saute until tender and slightly browned. Add sauce, bean sprouts and pasta and continue cooking on medium heat in skillet until bean sprouts are slightly tender.
In a separate pan sauteed shrimp in remaining olive oil.
Serve in a bowl with pasta bean sprouts and vegetables on the bottom topped with eggs and shrimp. Garnished with peanuts, green onions and cilantro if desired.
