0.3 cup Bell peppers (Green, Red, Yellow, Orange) 1.4 serving Great Value Pimmento Stuffed Green Olives (1 serving = 5 olives) 3 large Egg, fresh, whole, raw .5 cup (not packed) Cottage Cheese, 2% Milkfat 0.5 tsp salt, table (by CDOWNEY1) 1 dash Pepper, black 1 oz Mozzarella Cheese, part skim milk
Distribute peppers and olives in egg bite mold. Blend eggs, cottage cheese, salt and pepper until smooth. Pour into mold. Divide mozzarella among all bites. Cover loosely with aluminum foil. Put on trivet in instant Pot, with I cup water in pot under trivet. High pressure 6 minutes. 10 minutes natural release, then quick release. Let stand 5 minutes before removing from tray.
