No Oil Corn Muffins

Ingredients
3/4 cup Quaker Yellow Corn Meal1 1/4 cup all-purpose flour1/4 cup sugar2 tsp baking powder1/2 tsp salt1 cup fat-free skim milk1/4 cup unsweetened applesauce1/2 cup Egg Beaters Refrigerated Egg Whites
Directions
Heat oven to 450 degrees. Grease muffin cups.

Combine dry ingredients. Stir in milk, applesauce & egg whites, mixing just until dry ingredients are moistened. Pour into muffin cups.

Bake 20-25 minutes or until light brown on top.

    These were a bit dry but...For a healthy corn muffin this was great. We had it with Shrimp and I broke the muffin in half and put the shrimp inside, which was actually really tasty.. :) - 6/3/09

    You might want to play with the recipe a bit - add more applesauce; or, gain a few calories and add a little oil.

    Of course, by nature, corn muffins can tend to be drier than other kinds of muffins.
