Potato Onion & Pepper Frittata

6 large eggs, well beaten1.5 - 2 c. boiled (or leftover) potatoes, chopped/sliced6 TBS butter1/2 - 3/4 c. grated Parmesan cheese1 c Mozzarella, shredded1 c Green Bell Pepper, strips or chopped1 c Scallions, chopped (including green parts)2-3 Garlic cloves, choppedSalt & pepper as desiredAdd mushrooms if you like them.
Melt butter in a large, heavy (iron) skillet.
Mix potatoes, bell pepper, onion, garlic, parmesan, & mozzarella (plus salt & pepper if desired) together. Add 1/2 to your well beaten eggs & pour mixture into the skillet.
Turn heat to low & let the egg mixture settle - about 10-12 minutes.
Add some chopped parsley to the remaining veggie & cheese mixture. Turn your broiler on. Sprinkle the mixture over the eggs and put the skillet under the broiler for a couple minutes. Let the top set & brown a bit.
Run a spatula under the frittata & slip it out onto a platter. Fresh tomato slices are a delightful accompaniment to this dis!
