.5 cup, chopped Onions, raw .5 cup Milk, 2%, with added nonfat milk solids, without added vit A 1 cup, Heavy whipping cream12 oz broccoli.5 cup Mayonnaise, regular (mayo) 8 oz Cheese - Kraft Sharp Cheddar - Block , shredded by hand4 tbsp Cream Cheese 1 tbsp Olive Oil 16 ounces Chicken Breast (cooked), no skin, roasted
1. Preheat oven to 350º F. Spray 2-qt. casserole dish with cooking spray. Cook broccoli in microwave according to directions; set aside.
2. Heat olive oil over medium-high heat, add onion and mushrooms (if using) and cook until mushrooms are starting to get tender. Add cubed chicken. Drain pan, if needed.
3. Stir in milk and whipping cream. Bring to a boil and cook for 3 minutes, or until thick and bubbly.
4. Stir in cooked broccoli, and heat through about 1 minute. Add cream cheese, half shredded cheese, mayo, salt and pepper, stirring lightly to combine. Add any other seasonings at this time.
5. Pour into prepared casserole dish. Sprinkle top with cheese and bake for 20 minutes, or until cheese melts and it's bubbly around the edges. Enjoy!!
