Baked Potatos with a TASTY Twist

1 Medium Sized Baking Potato10g Grated extra light or light cheddar cheese5g (a generous splash) of non-fat (skim) milk2 good teaspoons of garlic paste or freshly crushed garlic2 Tbsp extra light sour cream2 tsp fresh chives, chopped finely2 tbsp low fat parmesan cheese(the calories,fat etc of this recipe will be even less than stated as the SP database doesnt hold extra light options)
1.Pre-heat oven to 200C
2.Wash potato, stab several holes in either side of it and place in microwave on high for 3 mins/side.
3.While potato is in microwave, combine the sour cream with the garlic paste and chopped chives in a bowl, stir well and set aside. Grate the cheese.
4.Take potato out microwave and place in oven on top shelf until skin begins to crisp( about 10/15 mins). Then take it out and cut in half.
5. Carefully scoop out inside into a bowl (make sure jackets arent damaged), and put in the sour cream mixture, and the parmesan cheese mash and mix well, adding in, the milk. Mix all of the ingredients together until they are creamy.
6. Put the potato mixture back into the skins, sprinkle with grated cheese and put back into oven (this time in a dish or on a baking tray to catch melting cheese)
7. Bake until the cheese has melted and gone golden brown, serve and enjoy.
