1 lb Chicken - Extra Lean Ground chicken 1 package (10 oz) Spinach, frozen, thawed & drained6 oz Stove Top Stuffing Mix (unprepared)2 large Eggs, whisked1 cup, chopped Onions, raw 1 tbsp Extra Virgin Olive Oil 1 tsp Oregano, ground 1 tsp Basil, dried ground (by MELISSA_X0) 1 cup (8 fl oz) Water, tap .75 cup, crumbled Feta Cheese
Preheat oven to 350 degrees.
Spray 12-cup muffin pan w/cooking spray.
Saute chopped onion in olive oil until tender. Add oregano and basil, mix well.
Add ALL ingredients to large mixing bowl. Combine well. Spread evenly amongst 12 muffin cups.
Bake in preheated oven 25-30 minutes, or until muffins have reached 165 degrees.
Serve with tzatzik sauce, if desired.
