Gluten free apple cinnamon muffins

Ingredients
210 gram(s) Pillsbury BEST Multi Purpose Gluten Free Flour Blend((26g 3tbsp )(1c= approx 139g) (by IVYSPARKS) 1.5 tsp Baking Powder .25 tsp Baking Soda .25 tsp Salt 1 tsp Cinnamon, ground .25 tsp Nutmeg, ground .5 cup Granulated Sugar 6 tsp Granulated Sugar 200 gram(s) Apples, raw, without skin, diced 6 grams Cornstarch 8 tbsp Butter, unsalted melted and cooled 1 serving Chobani 2% Plain Greek Yogurt (8 oz) 100 grams Egg, fresh, whole, raw (beaten)2 tsp Vanilla Extract
Directions
Pre-heat oven to 325/ line muffin tin with cupcake liners.
In a large bowl combine flour (add 3/4 tsp of Xanthan gum if it is not in your flour mix), baking powder, baking soda, salt, 1/2 tsp of the cinnamon, nutmeg and 1/2 cup of sugar.
In a separate bowl place apples, the remaining 1/2 tsp of cinnamon and 2 Tbsp of sugar and the cornstarch. Toss to combine.
Add about 2/3 of the apple mixture to the flour mixture and toss to coat. Make a well in the center.
Add the butter, Greek yogurt, eggs and vanilla/ Mix by hand till blended. Batter is thick.
Fill muffin tins most of the way and smooth the tops with wet fingers. Place the left over apple pieces on each mufin pressing gently. put in oven about 22 minutes. A toothpick inserted in the midle should come out with just a few crumbs on it.
