Roasted Broccoli

1 1/4 pounds fresh broccoli florets2 tablespoons extra virgin olive oilNonstick cooking spray
Place heavy baking sheet in oven on lower rack. Preheat oven to 425 degrees. Do any necessary prep work on the broccoli to make fairly even sized florets.
When the oven reaches temperature, remove the pan and spray completely with Pam or other nonstick cooking spray. Add the oil and tilt the pan to cover completely. Add the broccoli using 2 pans if necessary to leave space between the florets.
Return the pan to the oven and roast for 11 minutes. Turn the florets over and continue roasting another 4 minutes. Remove from pan and season to taste with salt and/or pepper.
Serving Size: Makes 4 servings, about 3/4 cup each
