Ingredients
1 Cup Zucchini, sliced1 Cup Summer Squash, sliced1 Cup Onion, sliced3 Tblsp Olive Oil
Directions
Slice zucchini, summer squash and onions. In large frying pan, heat olive oil over medium high heat. Add sliced vegetables. Saute until lightly browned.

    We love this with a bit of added minced garlic and as small amount of seasoning salt, stirring in halved grape or cherry tomatoes in the last minute of cooking. I stir fry until the vegetables are just tender crisp. - 9/30/08

    You could also add fresh tomatoes (homegrown is the best!) and towards the end of sauteing it add a little mozzarella cheese- awesome! - 8/6/08
