Apples & Almonds Flax Seed Muffins

Ingredients
1 cup flax seed meal1/4 cup protein powder2 teas baking powder1 tbsp cinnamon1 teas nutmeg1/2 teas saltEquivalent of 1/2 cup of brown sugar for artificial sweetener (Sweet'n Low Brown Sugar, or equivalent)1/4 cup sugar4 large eggs, beaten1/8 cup olive oil1/8 cup no sugar apple sauce1/2 cup water1 tbsp vanilla1 med apple, chopped finely1/2 cup chopped, toasted almonds
Directions
Preheat oven to 350 F. Grease 12 muffin tin well.

Mix up dry ingredients and sift. Mix up wet ingredients in a mixer. Combine and then let batter stand 10 minutes. Put into muffin tin and cook for 18 minutes, or until toothpick comes out clean and muffins barely start to pull away from the sides of the tin.

If you have extra calories for the day, you can top with peanut butter.
