Mint Chocolate Breakfast Bar

1 cup, pitted Dates 1 cup Steel Cut Oats, dry 1 tbsp Cocao Nibs 2 tbsp Cocoa, dry powder, unsweetened .5 tsp Peppermint Extract.5 tsp Vanilla Extract
In a food processor, chop the dates until small pieces
Process in the other ingredients (except the cocoa nibs). Process until doughy and well incorporated.
Fold in the cocao nibs
Press into the bottom of a loaf pan and cut into 6 pieces (or form into 12 balls, 2 balls per serving)
Serving Size: Makes 6 bars
