Chicken Salad, Mayo-Free

Ingredients
1/2 cup shredded, cooked chicken, light meat1/2 cup shredded, cooked chicken, dark meat3 tbsp dijon/ brown mustard1/2 tsp Beau Monde seasoning (contains salt, sugar, celery, and onion; not factored into nutritional info)1/4 tsp black pepper1 tsp minced garlic (rehydrate if using dried)
Directions
Place finely shredded chicken in bowl. Sprinkle Beau Monde seasoning & black pepper over chicken. Stir in minced garlic and mustard. Add additional seasonings if desired. If possible, place in refrigerator overnight for the best flavor.

Makes two 1/2 cup servings. Serve on a whole wheat toast with tomato slices for a filling sandwich, or serve on a bed of romaine lettuce for a lower-carb option.
