GF EF Meatloaf

12 oz Ground beef, lean 4 oz Jimmy Dean all natural pork sausage (by SLS101) .5 medium (2-1/2" dia) Onions, raw 1 tsp Garlic 1 tbsp Olive Oil 1 cup, grated Carrots, raw 1 cup diced Potato, raw 1 cup Squash - Yellow and Zucchini 2 tsp Paprika 4 tbsp Ketchup - Hunts "No Preservatives" Tomato Ketchup 1 tbsp Molasses
Bring meats to room temperature while preparing veggies. In A skillet, cook onion in oil until tender (5mins) Add garlic and all veggies. Cook aprox 5 mins. Set aside to cool.
Mix meats and Smokey paprika lightly. Add veggies and mix lightly again. Form into loaf* and place in loaf pan. Cook at 350° for 1 hour. Mix ketchup and molasses and spread over loaf and cook another 15 mins.
* Recipe works well for meat patties or meatballs.
