10 serving Rice Paper Spring Roll Wrapper (1 wrapper) (by ABOUTMETODAY!) 2 cup, chopped Carrots, raw 2 cup, chopped Peppers, sweet, red, fresh 2 cup slices Cucumber (with peel) 1 cup Rice Noodles, Cooked (by DANCERMINA) 2.5 serving Cooked Medium size shrimp (8 shrimp) 1 cup cilantro (fresh) (by MINDTHEGAP7) 2 cup Green Leaf Lettuce 2 cup Bean sprouts
Prepare the rice noodles by letting them soak in warm water.
Prepare the rice wrap by quickly soaking the rice paper.
Julienne most of the veg except lettuce leaves, pile all the vegetables and shrimp on top of the leaves. Modify with whatever raw veg you like and use smoked tofu for vegan option.
Serve with homemade peanut sauce.
