Red Quinoa and Brown Lentil Salad

Ingredients
1/3 cup red whole grain quinoa1 c brown lentils1 cup broccoli florets- steamed and cut small1 Tb red onion or shallot, diced small1 green onion, sliced zest from 1 lemonVinaigrette Dressing or your preferred dressing. (not calculated)
Directions
Rinse and pick lentils and cook as directed.
Rinse quinoa very well then cook as directed.
Steam and cut broccoli.
Drain and rinse ingredients under cool water then combine.
Toss with lemon zest and your favorite Balsamic Vinaigrette or other dressing.

Serving Size: Makes about 4 hearty 1-c servings.
