Raspberry Applesauce Muffins

Ingredients
2 cups flour3/4 cup white sugar2 tsp baking powder1 tsp ground cinnamon1 large egg1 1/2 cups unsweetened applesauce1 tbsp canola oil1 cup raspberries
Directions
Blend all the dry ingredients in a bowl. Add the remaining ingredients, all at once, and mix just until blended. Do not over mix.
Fill paper lined, muffin tin. Bake at 375 for 18 - 20 minutes.
Can be served warm or cold
Optional: You can replace the raspberries with anything you like. Or add additional ingredients... I've tried with walnuts, chocolate chips, blueberries, etc. But, remember that adding these "extras" also adds more fat and calories.

    This recipe worked great for me! It's not too sweet. Mine baked perfectly. I did use fresh berries though, not frozen. If you use frozen berries there will be too much moisture and they won't bake properly. I also substituted 1/4C of flour for 1/4C oats for some added fiber. Excellent recipe! - 5/28/12

    I followed the recipe to the letter, but after baking for twice as long as the recipe called for, they were still gooey inside. - 7/22/10
