4 peaches, slicedjuice of 1/2 a lemon1 tbsp brown sugar1 tbsp minced fresh ginger root2 oz brie cheese
Place sliced peaches in a large microwavable bowl. Sprinkle with brown sugar, lemon juice, and ginger root. Mix well. Cook on high in microwave for 2 minutes, or until brown sugar dissolves. Let cool. When ready to serve, spoon salad into 4 small bowls, and top each with half an ounce of brie. Makes 4 1-cup servings.
