Turkey Stuffed Green Peppers

Ingredients
14 Medium - Large Bell Peppers2 packages (20 oz each) 93% ground turkey2 cans (14.5 oz) diced tomatoes (or 1 large 28 oz can)2 cans (8 oz each) tomato sauce7 cups cooked brown rice2 packets Sazon seasoning4 tsp. Adobo seasoning2 cups reduced fat shredded cheese
Directions
*Preheat oven to 350

- Cook brown rice according to directions.
- Cut tops off of peppers, rinse seeds out. Boil in pot of water for 10 minutes (will need 2 pots to fit them all)
- Brown ground turkey, drain and rinse
- Add tomatoes, sauce, seasonings to ground turkey. Simmer
- When rice is ready, add to ground turkey/tomato mixture. Mix well.
- Stuff peppers with meat and rice mixture.
- Place in baking dish and top with cheese (NOTE: Cheese adds about 46 calories per pepper. I have included that into the nutritional inforomation)
- Bake for approximately 5 minutes until cheese is melted.

*Makes 14 servings of 1 stuffed pepper with cheese each.
