Chicken Afritada

Ingredients
Garlic, 2 cloves crushed finely, removed peelOnions, raw, 1 cup, chopped Red Ripe Tomatoes, 1 slice, medium (1/4" thick) *Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.) quarteredSalt, 2 tsp Green Peppers (bell peppers), 0.5 cup, chopped Pepper, black, 1 tsp Chicken Broth, 0.75 cup (8 fl oz) Chicken Breast, 2 breasts, bone and skin removed and cut to small sizes*Canola Oil, 1 tbsp
Directions
Heat pyrex pan with canola oil; saute garlic, onion and tomato. Add chicken pieces, potato quarters and the broth. Season with salt and pepper. Allow to boil and continue to simmer over medium heat until chicken and potato are tender.
Add bell pepper and cook another 3 to 5 mins. Serve hot
