Garlic-Spiked Broccoli and Mushrooms with Rosemary

2 tsp. olive oil2-3 garlic cloves, minced 2 cups sliced button or cremini mushrooms4 cups chopped broccoli1 Tbsp. chopped fresh rosemary (or 1 tsp. dried)Salt and freshly ground pepper, to taste
In large skillet, heat oil over medium heat. Add garlic and saute 1 minute. Add mushrooms and saute 3 minutes, until mushrooms release juice. Add broccoli and rosemary and cook 3 to 5 minutes or until broccoli is crisp-tender. Season to taste with salt and pepper.

For those who 'don't like' rosemary... try it, but with fresh. Makes a huge difference. I used to not like it either, until I got a dish made with fresh... now I love it! If you're still not sure, use just half of what the recipe calls for. You just might find out you really DO like it! :-) - 12/6/11

I thought this was a bit dry to, even after adding a bit more olive oil (which I really didn't want to do). I hadn't read the suggestions here but I think steaming the dish with some water might moisten things up a bit. The wine sounds like a good idea too. It's still a palate adjustment for me... - 8/27/09
