Thai Pork with Red Bell Peppers, Slow Cooker

1 cup fat free chicken broth1/3 cup less sodium soy sauce1/3 cup extra crunchy peanut butter 3 tbsp honey 6 clove garlic, minced 1/2 medium (2-1/2") onions, very thinly sliced2 large red bell peppers, sliced and bite size pieces6 tsp minced ginger root 1 tsp crushed red pepper flakes 1 pound boneless pork chops, cubed raw (or cook, remove and then shred)
Place the chicken broth, soy sauce, peanut butter, honey, garlic, ginger, crushed red pepper flakes, red bell peppers, and pork chops into a slow cooker, stir together, and set the cooker on medium. Cook for ~4 hours or until the pork is tender. If you didn't cube the pork, remove the chops from the sauce and shred the pork, return to the sauce, let cook until hot, and serve.
