2 cup Water, tap 1lb. 80/20 ground beef chuck 1 box Rice a Roni Spanish rice unprepared1 can (10.5 oz.) Rotel Diced Tomatoes and Green Chilies Mild 1 can (14.5 oz.) Delmonte canned corn 50% less sodium 1 tsp Cumin - ground 1 medium (4-1/8" long) Scallions, raw rinsed and chopped1 cup Shredded Sharp Cheddar Cheese
Brown ground beef, drain. Set aside. Prepare rice according to directions using the Rotel diced tomatoes, water, and the margarine. Stir in the ground beef, and corn (drain the corn first). Sprinkle with cheese.
I stirred in drained and rinsed black beans separately into mine (hubby doesn't like black beans).
