Laurie's Sesame Ginger Chicken & Rice

2 cups fresh summer squash (sliced)2 cups fresh carrots (sliced)1 vidalia onion (sliced)1 can pineapple chunks (no sugar added)2 cups white rice (uncooked)8 oz bonesless chicken breast (more if you want)3/4 cup Lawrys Seasame Ginger Marinade
Add water to rice and put in microwave.
Steam carrots and Squash til 75% done.
Add marinade and 1/4 cup pineapple juice to saute pan. Add onions and chicken, stir til cooked.
As everything is just about ready, add veggies to the saute pan, add pineapple and stir.
Pour mixture over rice, garnish with some peanuts.
Makes 4 good size portions. Very light and summery!
