Ground Chicken (4oz/112g), 4 serving (2 servings of thigh, 2 servings of breast)Olive Oil, 2 tbspMinced Garlic, 1 tspSalt, 2 dashOnions, raw, 1 smallCauliflower, raw, 1 head, small (4" dia)Trader Joe's Whole Kernel corn (No Salt), 1 cupCrushed Tomatoes, 8oz/227g (1 can)Trader Joe's Broccoli Slaw, 2 cupBasil and Oregano (to taste)
Add olive oil to pan on medium heat. Dice the onion and cauliflower, and sautee them in the olive oil with the minced garlic and salt. Turn heat to high, add the entire can of corn, and stir. Add the ground chicken and brown it in the pan. Add the crushed tomatoes and broccoli slaw. Add basil and oregano to taste.
Reduce heat to medium and cook, stirring a few times, for 10-15 minutes until the chicken has been thoroughly cooked.
Reduce heat to low, cover the pan, and simmer for 20-30 minutes.
Serve over brown rice (rice is not included in the nutrition data, since everyone wants different amounts of rice with their Stuff).
Serves 6 (approximately 1 cup each).
