Mulligatawny Soup

Ingredients
1/2 c chopped onion1 green pepper chopped1 c chopped carrot2 Tbsp olive oil1 1/2 Tbsp all purpose flour1 1/2 tsp curry powder4 c chicken broth1/2 apple grated1/4 c brown rice4 oz boneless skinless chicken breastpinch, salt, pepper, dried thyme
Directions
Saute onion, pepper, and carot in olive oil. Add flour and curry and cook 5 minutes.

Add chicken broth, mix, and bring to a boil.

Simmer for 30 minutes.

Add apple, rice, chicken, salt, pepper, and thyme. Simmer another 15-20 minutes or until the rice is done.
