Karen's Flaxseed Muffins

Ingredients
1 1/2 cup Ground Flaxseed (cab use Low Carb Success Cinnamon & Spice)2 cup Almond Meal1 cup Soy Protein (Not flour or in a can - use bulk)2 Tbs Stevia (no substitute)30 packets or 1/4 cup Splenda2 tsp Baking Soda4-6 tsp Cinnamon (personal taste)1/2 tsp Sea Salt1 cup pecan pieces1 cup Walnut Pieces-------------------------------------------------------1 Cup Egg Beaters or 4 eggs (was calculated with egg sub)6 Tbsp Olive oil1 1/4 Cup Applesauce (unsweetened)2 Cup Soy Milk
Directions

Mix dry ingredients together in one bowl
Mix wet ingredients together in one bowl.
Combine the two.
Spray muffin tins with non-stick spray
Fill muffin tin 3/4 full - don't rise much
Bake @ 350 20 minutes or untl knife inserted in middle of muffin comes out clean.
Makes 24 muffins
