Ingredients
1 cup green lentils1 garlic clove, crushed1 small onion, chopped4 tbsp butter2 tbsp sunflower oil1 1/4 cups basmati rice2 tsp ground coriander2 tsp cumin seeds2 cloves3 cardamom pods2 bay leaves1 stick cinnamon 4 cups vegetable broth2 tbsp tomato pastesalt and black pepper to taste3 tbsp fresh coriander or parsley, chopped
Directions
1. Cover the lentils with boiling waterand soak for 30 minutes. Drain and boil in fresh water for 10 minute. Drain once more and set aside.
2. Fry the onion and garlic in the butter and oil in a large saucepan for about 5 minutes.
3. Add the rice, stir well to coat. Then stir in the spices. Cook low for about a minute.
4. Add the lentils, broth, tomato paste, and seasoning. Bring to a boil, then cover and simmer for 20 minutes until the broth is absorbed and the lentils and rice are just soft. Stir in the fresh herbs and check the seasoning. Remove the bay leaves and cinnamon stick.
