Spinach Chicken Rice

Ingredients
1 cup White long grain rice (Basmati is great)2 Skinless boneless Chicken breasts cubed (Can use tenderloin too)1 cup frozen chopped Spinach3/4 cup Tomatoes chopped1/2 cup Red Onions (sliced)1 tbsp Extra light Olive Oil (Any other oil is ok too but adds calories)1 tbsp low fat yogurt1 tsp Cumin seeds1/4 tsp turmeric powder1/4 tsp chilli powder3 cloves garlic (minced)1/2 tsp ginger root (grated)2 tsp salt2 cup water
Directions
In a bowl mix yogurt, minced garlic, grated ginger, turmeric powder, chilli powder and 1 tsp salt. Add cubed chicken pieces to it and let it sit for 5 minutes. Chop your vegetables in the meantime.
Heat oil in a large pot and add sliced onions and cumin seeds stir for 1 minute on high heat. Add the marinated chicken and cook for another 3 minutes. Add spinach and tomatoes and stir well. Mix in the rice and add water. Reduce the heat to medium and cook for 10 minutes.
Server with plain yogurt or Raita.
