Rosemary-Encrusted Chicken Breast

Ingredients
2 large Tyson frozen boneless chicken breast (thawed)2 tbsp extra virgin olive oil2 cups olive oil and rosemary flavored Triscuits (or your favorite chips, bagel chips or crackers)cooking spray
Directions
Preheat your oven at 350 degrees F. Spray shallow baking dish that fits breasts without touching, with cooking spray.

In a gallon-size closed Ziploc bag, breakup chips with a rolling pin or mallet until it is fine pieces. Add olive oil to bag and shake closed bag till mixed well. Add chicken, one at a time to the mixture until well encrusted. Place chicken breast in pan and bake in oven for 30-45 minutes, depending on how thawed the chicken is. Chicken should be a nice, even golden-brown.
