Black Bean Salad

2-15 oz cans black beans 1-15 oz can RO*TEL diced tomatoes with lime juice and cilantro1/4 c. diced white onion (or green onion is good too)1/4 c. chopped fresh cilantrofresh lime juice (optional)
The 3 c. of black beans is actually 2-15 oz. cans. Drain and rinse. Drain a can of tomatoes with chili peppers (I use Ro-tel Diced tomatoes with lime juice and cilantro, but you could use the Ro*tel with diced tomatoes and chopped chilis if you like it spicier). Dice onions, and chop the cilantro. Me, I like cilantro so I add a lot. Mix all ingredients in a large bowl and refrigerate. Can be eaten as a salad or use with tortilla chips as a snack. Optional: squeeze fresh lime juice over all. Yield: about 6-8 servings
