Mum's Lunchbox Cookies

Ingredients

1/2 cup butter1/2 cup fine white (caster) sugar1/2 cup soft brown sugar1 tsp vanilla1 egg1 1/4 cups plain flour1/4 cup self raising flour (if in US use all purpose flour and add 1/2 tsp baking powder)1/2 tsp cinnamon1/2 tsp baking soda1/2 tsp ground ginger1 1/4 cups oats1/4 cup marmalade1 cup raisins
Pre-heat oven to 200C, Gas 6, 390F
Cream butter and sugars together.
Beat in egg and vanilla.
Sift dry ingredients together, add to creamed mixture.
Fold in oats, marmalade and raisins.
Drop by teaspoonfulls onto greased oven trays. Bake in moderate hot oven for 15 minutes.
My mum says it makes 36-40 cookies but I like them bigger so only manage about 24.

I am so glad I found this recipe, I think it is a very old Woman's Weekly one and perfect for a snack. - 8/28/11

I got it from my mum but I think she copied it out of an old Woman's Weekly cookbook which she got when she first married in the late 60's. I've loved these cookies since I was a kid.
