GREEN CHILI

Ingredients
Extra Virgin Olive Oil4lbs Pork cut into bite size pieces (Roast, Loin or Country-Style Ribs whatever is on hand)3 tbsp Ground Black Pepper1 tsp salt2 Large Onions Chopped3 Jalapeno Peppers3/4 cup Flour1 cup Water6 cups Green Chillies fresh or canned skins and seeds removed and chopped1 16oz can stewed tomatoes chopped9 cups Water
Directions
Heat a large pot over medium heat. Add olive oil and pork. Cook until pork is no longer pink. Remove to a plate with a slotted spoon. Add onion and jalapenos to the seasoned oil, sautee until just soft. Mix flour and some warm (not hot) water in a jar. Add to the pan and whisk until boiling to avoid lumps. Add pork, green chillies, stewed tomatoes and the rest of the water to the rue you have created in the pan. Cook for at least 30 minutes on the lowest setting your stove will manage. Longer cooking time (up to 2 hours) will make better flavor and consistency.
Serve with Quesadillas or just some warm tortillas.
