1 cup Brown rice3 cups Water1 cup diced yellow, orange and red pepper1/2 cup chopped red onion1/2 cup chopped fresh parsley1 tablespoon dried cilantro1 tablespoon Spice Hunter brand Mexican seasoning2 tsp salt1 tsp fresh ground pepper*salt and pepper, add more or less to tasteCombine and microwave until rice is almost tender (about 30 minutes)add 1 cup black beanscook until all water in evaporatedstir in 1 cup fresh diced tomato (yum)If you eat this hot, top with a bit of cheese0r cold, mix in 1 cup shredded Colby jack cheese
