1 eggplant1lb ground beef2 tbsp tomato paste2 tomatos2 peppers1 large onion2 cloves garlic.25 cup butter2 glasses of water
peel and cube eggplant, place in a bowl of water and salt for about 30 minutes, then drain
fry together onion and garlic, add tomatos and peppers and cook. add ground beef and tomato paste and let simmer.
in another pot, lightly fry eggplant cubes, drain then add them to the pot with the beef in it. add 2 glasses of water, spices, oregano, salt, pepper, red pepper, etc, and cover. cook on low heat for 20 minutes or so until some water is absorbed. serve with rice and yogurt.
makes 8 1cup servings.
