Chèvre Zucchini Gratin

Ingredients
2 Cups Zucchini Sliced Thinly3 tbsp Butter, unsalted 1 serving Onion, Sweet 1 Large - Sliced Thinly8 oz Madame Chevre Fine Herbs Soft Goat Cheese 0.5 cup, fluid (yields 2 cups whip Heavy Whipping Cream 0.5 cup Parmesan Cheese, grated
Directions
(1) Preheat oven to 350 degrees. Grease a 9 X 13 inch baking dish. (2) Boil zucchini in salted water until tender, but still crisp. Approximately 2 minutes. Drain and pat dry. (3) Melt butter in a skillet. Sauté onion until translucent (3) Arrange 1/3 of zucchini in the greased pan. Season with salt and pepper. Spread 1/2 of onions over the layer of zucchini. Repeat the layers ending with zucchini on top (4) Crumble chèvre and stir in cream. Microwave for 1 minute. Mix together. It should be smooth and thick. Add additional cream if it is too thick. (5) Pour over zucchini layers (6) Sprinkle grated parmesan over the top (6) Bake 35 to 40 minutes.
