Peanut Butter Cookies - wheat free

Ingredients
1 egg slightly beaten1 C. sugar1 C. peanut butter1 tsp. baking soda
Directions
Preheat oven to 350 degrees
Combine all ingredients until smooth
Use medium cookie scoop and drop onto an ungreased cookie sheet
Use a fork to make a crisscross pattern on top of each cookie
Bake 10-15 minutes

I roll into balls then make crisscross pattern. Cookies are more uniform and I can make 40 cookies this way. I can then eat two cookies for the serving of one and feel like I'm eatting more!
