Meatball and Macaroni Soup

1 T Extra-Virgin Olive Oil1 Med Onion chopped1/2 C Carrot chopped4 C Chicken Stock1/2 lb Turkey Sausage3 T Parmesan Cheese Grated3 T Bread Crumbs1 Egg1 Garlic Clove, Minced2 T ParsleySalt and Pepper to taste1/2 C Elbow Mararoni
Heat olive oil in med pot. Saute the onion and the carrots fro 5 min, then add broth and bring to a boil. In a med bowel, mix the meat with the cheese, bread crumbs, egg, garlic, parsley, salt, and pepper.
When the broth has come to a boil, drop meat mixture into broth in 1 inch balls. Stir in macaroni and cook for 9 minutes covered or the macaroni is tender.
