Keto Kielbasa Rolls

Ingredients
12.0 oz Kielbasa- Kroger Beef Polska Kielbasa4.0 serving Bob's Red Mill Almond Flour - per 1/4 Cup1.0 cup, shredded Mozzarella Cheese, whole milk0.5 large Egg, fresh, whole, raw0.5 tbsp Kraft Mayo Light Mayonnaise (Mayo)1.0 tbsp Olive Oil
Directions
When I make this I make a double batch and freeze half. Mix the cheese, half the almond flour and mayonnaise into a bowl and microwave for 10 seconds. Knead into a dough. Microwave again if the cheese isn't blending. Add beaten egg, seasoning to taste, and remaining almond flour, kneading until dough isnt sticky. If it ends up being a bit sticky you can add more cheese or almond flour or just use parchment paper to handle. Cut the kielbasa into 2 oz sections. Flatten the dough and roll over the kielbasa, covering it. Cut off any remaining on the sides. Place on baking sheet and use a basting brush to spread the olive oil on all sides of the roll. Place in the oven and bake for 35 minutes. Let cool and serve with mustard.
