Cauliflower Pizza (Keto)

2 large Egg, fresh, whole, raw 2 tbsp Red Mill Organic Coconut Flour 2 12 oz bags Cauliflower, Frozen12 oz Galbani Mozzarella (whole milk) 1/2 cup Redpack Tomato Sauce 8 oz can
Cook the frozen Cauliflower less than it calls for. I do about 4 minutes instead of 7. Squeeze out liquid, I use a thin kitchen towel or cheese cloth. Chop in a cuisinart. Pour into a medium bowl and add the eggs and flour. Mix by hand. Can also add some spices to the crust at this time too.
Prepare 3 area for the piles on cookie sheets covered with parchment paper.
Separate the mixture into 3 equal piles and add to the cookie sheets. Press down into a thin circle or oval.
Bake for 25 minutes, flipping about half way.
Add toppings (pepperoni, peppers, onions, mushrooms, olives, variety of meats like chicken with BBQ, steak, turkey, spinach....)
Bake for 10 more minutes or until desired crispness and browness.
