Baked Parmesan Zucchni Fries

Ingredients
0.25 cup Bob's Red Mill Almond Meal/Flour (1/4 cup is 28g) 4 large Egg white, fresh 8 serving Kroger Pork Rinds (1/2 oz) .75 oz Parmesan Cheese, grated 1.5 tsp Oregano, ground 340 grams Zucchini
Directions
Preheat oven to 425, line 2 baking sheets with parchment paper.Place almond flour in shallow dish. Place egg white in separate shallow dish. Dredge in almond flour,shake. Dredge in egg whites, shake. Dredge in pork rinds,shake. Arrange zucchini, well spaced, in a single layer on baking sheets. Coat with cooking spray. Bake until golden brown.
