Low Fat Vegetarian Omelet

2 egg whites1 whole fresh egg1/2 cup of mixed peppers (I dice green, yellow, orange and red peppers together)2 or 3 tablespoons of diced onion1/2 oz of your favorite low fat cheese (I use a colby/ cheddar mix)5 or 6 sliced grape tomatoes
cook on medium heat!! Very important!
Whisk together egg whites with whole egg, add diced veggies and pour into preheated, greased omelet pan or small sauce pan. *Very Important: cover pan with lid for about 5 minutes
top eggs with cheese (and I add fresh baby spinach) fold omelet over, cover again and cook on medium heat for about 5 minutes
Serve Hot.
I cut this omelet into 3 parts for my kids, as none of them could ever finish a whole one themselves
